I have been asked for many of the recipes I cook in camp so I will continue to add to this list ..I hope you try and enjoy . Many of the ones I use are family recipes some my mothers and grandmothers and others I have “invented”
Anyone who knows Jim knows he enjoys hot food and this is one of my easiest chili sauces which he puts on and in most things .
Uncooked Chili Sauce
500g fresh red chillis
125g fresh ginger peeled chopped
6 cloves garlic peeled
2 teaspoons grated lemon rind
¼ cup sugar
1 cup vinegar
Wash chilies cut stalks away doont remove seeds
Blend or process chillis ginger garlic allof the above ingredients bottle in sterilized jars seal stored in fridge up to 6 months
This is a great one if I am late back to camp maybe after a days sightseeing with guests.
Chicken in a Hurry (Serves 4) 1 BBQ Chicken 1 pkt cream of chicken soup 1 1/2 cups skim milk 1/2 cup stock water (optional) 1 x 500g pkt mixed frozen vegetables 1 diced onion 1/2 teaspoon basil Remove chicken from bones. Remove all the skin – Yes, All the skin & throw it away!!! huge Fats.
In a large saucepan cover vegetables & onion with boiling water, cook for 5 minutes. Drain, set aside – keep 1/2 cup of the stock water (may be needed later). In same saucepan, combine milk, soup mix & basil, bring to boil. Add veges & chicken, mix together. Cook 3 minutes, if mixture is too thick add left over stock water till the right consistency is achieved. Serve with cooked rice, pasta or potatoes.
